Erewhon Hack #1 Dandelion Quinoa Garbanzo Salad

There is no shade towards @erewhon applied here ! I love that beautifully curated store. However, costs are really high right now and @erewhon is at the top of the heap…so I’m looking to save 💰where I can.

This was a fascinating experiment lending awareness to true costs and how easy it is to save the dollars.

My final cost for a 12 ounce serving was about $2.50 less than the standard price for ☕️.

I used dry garbanzo beans and bulk quinoa, both organic and the greens were from the @thehfm

Cook garbanzos in heavily salted water! Drain and cool. Active time 3 minutes.

Rinse quinoa well then cook 1 cup dry in 1 3/4 cup water
Fluff when ready
Active time 4-5 minutes

Remove stems from dandelion greens, rinse & chop remaining leaves.
Active time 4-5 minutes

Thinly slice 1-2 scallions, about 1 minute active time

Mix in bowl:
1/2 bunch dandelion greens, 4 ounces cooked quinoa, 5 ounces cooked garbanzos, prepped scallions.

Dress with vinaigrette, season with salt & pepper and enjoy.


Whisk together:
1 ounce @getgraza sizzle
1 Tablespoon Champagne vinegar
1/2 teaspoon Dijon mustard
