Erewhon Hack #3 Tofu Sticks
A favorite in the deli and grab n go areas of #erewhon ….i marveled at the 💸 of $19.50 per container, make it for $6.50 Its tofu! The trick is in the tofu, texture is everything. The exterior is quite firm….and the combination of Air Fryer to Roast yielded a texture exactly like the one at #erewhon.
12 oz Super firm tofu
Pressed hard, water drained (see below!)
2 Tablespoons Organic avocado oil
1 garlic clove minced
2 Tablespoons Organic agave
2 Tablespoons Organic tamari
1 Tablespoon Sesame Oil
1 Tablespoon Japanese Sesame Paste
1 Tablespoon +1teaspoon Organic rice vinegar
1/2 teaspoon black sesame seeds
1/2 teaspoon sesame seeds
1/2 teaspoon mustard
1/4 teaspoon chili flakes
1/2 scallion, sliced
Okay Gang, the tofu instructions are super specific!! Only use SUPER FIRM tofu for this recipe.
Remove from the packages, drain excess liquid. Then create a weighted pressure system!
I used a rectangular tray, lined with 4 paper towels, stacked. Place two whole squares of super firm tofu on the paper towel bed. Place 2 more paper towels on top of the tofu.
Top with a second tray, then stack heavy stuff on top, I used a bunch of @staub_usa mini cast iron pans. You could use a heavy book too!
After 20 minutes, remove the weights, paper towels etc.
Slice each brick into 3 sticks, lengthwise.
I used 4 sticks for this recipe so 1 1/3 packs of tofu.
I cooked this recipe in a @breville #SmartOven
Set the cooking temperature to 480F, Airfryer setting Frozen, High Convection.
Pour the avocado oil into a small bowl, toss the tofu in the oil.
Place in the air fryer basket and let it cook for 15 minutes.
